Chocolate rolls
Serves 4

INGREDIENTS
200g cream
30g fresh kumquats, thinly sliced
salt, to taste
300g bitter sweet chocolate, chopped
2 egg yolks
18g unsalted butter (softened)
45g custard powder
4 spring roll wrappers
corn oil, for frying
sauce, to serve
mint leaves, for garnishing
PREPARATION
1. In a pan, heat cream, kumquats and salt until the mixture bubbles. Remove from heat.
2. When the cream mixture cools use a food processor or blender to mix with chocolate until smooth and shiny. Add egg yolks, butter and custard powder and mix well.
3. Line a small sheet pan with plastic wrap and pour the mixture onto the pan. Place in a freezer until completely frozen.
4. Cut into four strips and roll frozen strips in spring roll wrappers. Seal and freeze gain.
5. Heat oil in a deep pan and fry rolls until golden brown. Place on paper towels.
6. Serve with sauce of your choice garnished with mint.
